Use the word "not" before your criteria.

Please note, you will get much more specific answers if you tell us EXACTLY
what you want to do.  For example....

I have a query with a "city" field.  How can I exclude all records where the
city includes the word "St."?
- or -
I have a query with a date field.  I need to exclude all the records where
the date is later than today.

etc...

You set criteria on your fields in the query.  Not sure how else to
assist you.
