Sorry for those who have already answered.
I have searched as best I could for the following but I can't seem to find it.

1. I need to create a form that alerts a predetermined user and their
supervisor when an order is either - due in the future, due in a week, due
now and overdue.
I need to re-create this for several steps in the procurement process.

In short when a user inputs a delivery date, Access knows when that date is
coming, going or passed and automatically emails the user responsible for the
order then emails that user's supervisor when the user has not moved to the
next step in the order after a week.

I'm a basic new starter to Access so any dumbed down responses would be
greatly appreciated.

You need what is commonly referred to as a tickler. Ticklers are code which
pops up something to "tickle" your memory. I have an example of one on my
website that could be easily modified to do what you want:
